"Waverly Restaurant & Lounge, an all-day eatery and bar in the works for the community of Cardiff-by-the-Sea. Currently scheduled to open in early 2020, it takes the place of Rimel’s Rotisserie, which shuttered last month after 10 years. Waverly will bring a multi-purpose dining option to the neighborhood, offering breakfast, lunch, dinner, and weekend brunch. The menu, created by SDCM corporate executive chef Brian Redzikowski, will include soft poached eggs with spinach, heirloom tomato, serrano chile, and ancient grains, a wild king salmon summer bowl with asparagus, squash, chanterelles and Carolina Gold rice, and Maine lobster ceviche with shrimp chips and cilantro. A North County firm has been tapped to transform the approximately 3,000-square-foot space. Leucadia-based Design 4 Corners, whose past projects include Van de Vort at One Paseo and Kaito Sushi in Encinitas, will be conceiving the “coastal chic” open-concept dining room and lounge-like surroundings." - Candice Woo
