"I found the new 35-seat offshoot to be a takeout-friendly translation of Ashok Bajaj’s Bindaas concept, opening Thursday, April 21 at 415 7th Street NW around the corner from his fine-dining flagship Rasika. Partnering with James Beard Award–winning chef Vikram Sunderam and marking Knightsbridge Restaurant Group’s first fast-casual foray, it lets diners build bowls starting with grains like basmati rice, curried quinoa, lemon rice noodles, or coconut brown rice, then choose proteins such as salmon, chicken tikka, lamb meatballs, or a paneer–sweet potato kofta and finish with sauces like ginger‑coconut moilee, creamy tomato tikka masala, mellow cashew korma, or spicy red chile vindaloo; bowls come with a side of kachumber and there are four chef-created seasonal bowl combinations. The rolls program centers on Calcutta-style kathi rolls—fillings like chicken tikka, paneer and peppers, or lamb roast wrapped in flatbread—and much of the menu is $12 and under. Snacks include curry puffs (chicken or chili‑cheese), Parsi-style fried chicken sandwiches and a spiced 10-vegetable patty (a vada pav twist), gunpowder fries, samosas, and masala popcorn, and beverages range from masala chai and mango lassi to beers, wines and seasonal cocktails. Staff are trained to recommend mix-and-match protein-and-sauce pairings, there’s a grab-and-go section with pre-packaged bowls, rolls and snacks plus an express checkout, and proceeds from the first 100 customers during opening week will go to World Central Kitchen." - Aparna Krishnamoorthy
