"I consider this a superb Belltown fast-casual restaurant that capitalized on the 2016–2017 poke craze; “Fob” stands for “fresh off the boat.” The new Fob, at 1620 Broadway, brings the original’s efficient, affordable Chipotle-style customization—build-your-own bowls with rice or greens, a long list of proteins, sauces, sides, and toppings—to Capitol Hill. It doesn’t claim the most sustainable fish or the most traditional flavors, but the menu’s breadth comes together nicely: 14 proteins ranging from tuna and salmon to grilled chicken, octopus, and even Spam; a signature rice infused with matcha green tea and coconut; a signature sauce blending Hawaiian shoyu, house shoyu, and sesame oil; and sides/toppings like edamame, tamagoyaki (Japanese omelet), and pickled radish.
