"Just days after serving what it dubbed its final meal, Proof is reopening temporarily at Coconut Grove’s Taurus Beer and Whisk(e)y House starting Friday, April 20. The pop-up menu will feature many of the restaurant’s fan favorites — including the shaved brussel sprout salad and truffle pizza — alongside new dishes like a short rib pizza and dips such as charred eggplant and an aged cheddar fonduta. Its famous burger will return but only on Wednesdays, with just 24 sold each Wednesday, and none of Proof’s popular pastas will be included on this temporary menu. The pop-up is run in partnership with Michael Beltran (chef behind Ariete), will last a minimum of six months (possibly longer), and has these hours: 6–11 p.m. Sunday and Tuesday through Thursday; 5 p.m.–1 a.m. Friday and Saturday; 2 p.m. barbecue Sunday.
