"A gleaming snack shop at 4195 Broadway, near West 178th Street in Washington Heights, Tu Cachapa is a small counter-service spot with a communal table where I found some of the best Venezuelan fast foods in Manhattan. One dish I’d never seen before was the maracucha ($9.50): it begins with an estimated third-pound beef patty on a sesame seed bun, then in quick succession massive wads of roast pork, slices of boiled ham, and strips of bacon are piled on, followed by slices of American and mozzarella cheeses and notably fresh lettuce and tomato. A generous, Russian-dressing–like sauce and liberal ketchup are applied, with potato sticks sprinkled on top; every bite is a delight, though the sandwich is gloriously messy and I eventually resorted to a fork to clean up the spill. The counter dude told me the name refers to female residents of Maracaibo." - Robert Sietsema
