"Chef Sharon Richards-Noel grew up on the island of Trinidad and moved to Minnesota in 1982, where she first opened West Indies Soul Food as a food truck. The restaurant also operates a popular stand at the State Fair’s International Bazaar, but a permanent space is in the works on University Avenue in St. Paul. A menu isn’t available yet, but it’s a fair bet to expect some of the same highlights of West Indies Soul Food’s catering menu, from red snapper with rice and peas to curry chicken, beef, and goat.
