"Taking its name seriously, the new 3,000-square-foot production facility and tasting room at 3930 Georgia Avenue NW promises to source all producers featured in the space from within 200 miles of the U.S. Capitol. The American-made theme appears throughout, down to branded glassware with red, white, and blue tasting flights. The debut room will mainly serve snacks—hot dogs and charcuterie plates to start—with fare coming from Union Market vendors; the menu is still being finalized. Expect 12 taps pouring mainly gluten-free ciders, plus bottled ciders, wine, and cocktails. One notable small-batch collaboration with Distillery Lane Ciderworks used a 2017 blend of Goldrush, Arkansas Black, and Sundance apples infused with quince and aged more than half a year; as founder Jared Fackrell says, "The quince added a lovely floral bouquet and the apple blend imparted excellent acidity and structure."
