During COVID the operation shifted to curbside and online ordering, added a bottle shop and to-go sandwiches, and for the relaunch Mitchell plans to pair returning staples with new strategies—using the space at night for pop-ups and chef residencies, collaborating with local producers (including a diner-themed chocolate line featuring a rose-custard paczki flavor), and selling a signature pancake mix to help fund reopening.
