"Opening a second 700-square-foot Mayfair location later this spring, this pizza shop is the brainchild of a Chicago native and is known for cheesy, never-greasy pies with a buttered crust and daily in-house dough. It specializes in a Coors Banquet beer-battered thin crust (its most popular offering) while also serving a Colorado-style deep-dish with a thicker, fluffy crust and gluten-free options. The menu mirrors the original Golden Triangle spot and includes signature pies such as the meat lover’s heaven, East Colfax (green-chili sauce), Boulder Pie (vegetarian), The Magnificent 7, the Native (Margherita), the 5280 (local spices), Cease & Desist (sweet-and-salty), Avalanche (Alfredo and artichoke hearts), Hot Spring (spicy), Red Rocks (hot sauce), and the Cream Cheesman, plus dry-rubbed or saucy oven-baked wings, garden salads, breadsticks, and locally made Glacier ice cream. The new outpost will offer the same hours, takeout, delivery and online ordering as the original, and the company markets itself as Colorado’s first 100% wind-powered pizza business." - Susan Stapleton
