"I'm intrigued by this Italian restaurant's shift toward a darkly intimate, swanky feel within the hotel; the Olympia Provisions team and culinary director Nate Tilden drew inspiration from travels in Italy and restaurants around the world to shape it. It will operate as a rustic Italian joint with a daytime cafe menu serving coffee and items like panini, and will transition at night to Italian steakhouse-style dishes such as pork Milanese, branzino, bistecca alla fiorentina, and handmade pastas. Executive chef Katie Roe will migrate to the project from Olympia Provisions Southeast, and all of the restaurant’s pork products will be sourced from Olympia Provisions. Restaurant and wine director Jessica Hereth plans to showcase Italian vintages and more than 60 amari pushed on carts for tableside service (including expressions like the bittersweet Averna and sharply bitter Fernet), and she will suggest amari pairings with main dishes; the restaurant is expected to open in late April." - Janey Wong
