"Serving Bridgeview’s growing Yemeni community, Shibam is a gem. Its extensive menu includes some Yemeni classics like mandi (rice dishes with meat) and hearty options like fahsa and saltah (a braised meat stew topped with holba, fenugreek foam, and zhug, a ground paste of hot peppers, cilantro, garlic, olive oil, and spices). The fenugreek foam is part of what makes it so uniquely Yemeni and incredibly flavorful. Shibam offers breakfast with options like Yemeni-style ful, prepared atop charcoal (a common breakfast found here in Bridgeview now). The restaurant also make its own desserts, like arika, made with dates, bread, and honey. Shibam also has a Chicago location on North Elston Avenue." - Nylah Iqbal Muhammad
