"A homegrown food truck known for its creative takes on lumpia has found a permanent spot in Barrio Logan on Logan Avenue, where it will open a takeout shop and share a converted cottage and patio. Founded by local chef Spencer Hunter after launching as a pop-up, it evolved into a food truck and made it all the way to the finale of The Great Food Truck Race: Holiday Hustle; the truck will wind down its busy schedule—regular stops include Snapdragon Stadium and local breweries—to pivot to the Barrio Logan storefront. The menu ranges from traditional lumpia to inventive versions stuffed with mac and cheese, pork belly ramen, vegan curry, and pizza toppings, along with casual dishes like calamansi chicken wings, chicken adobo tacos, and Filipino-style smashburgers. Lia’s will initially operate from a to-go window off the cottage’s porch while Hunter works on turning the backyard into a communal seating area with the kitchen running out of a food truck or a renovated shipping container." - Candice Woo
