"I'm excited that New York is finally getting a restaurant entirely focused on tsukemen: TabeTomo, opening this fall at 131 Avenue A near St. Marks Place in the East Village, is being opened by Tomotsugu Kubo, who trained at Tsujita and helped open the California Tsujita LA Artisan Noodle Annex. The modest space will seat 24 with an additional 15-seat bar and will go hard on tsukemen, serving a tonkotsu broth simmered for more than two days alongside a “noodle bucket” filled with a huge portion of noodles that are thicker and chewier than typical ramen; the menu will also include vegetarian tsukemen, donburi rice bowls, and starters such as fried chicken skin, with the restaurant slated to open in November." - Serena Dai
