"Located on the fourth floor of Brickell City Centre, Marabu (701 S Miami Avenue) is a swanky new Cuban eatery from chef Alberto Cabrera and V&E Restaurant Group that debuts with josper-grilled Cuban cuisine and tropical cocktails in an upscale setting. I note Cabrera—who helped open popular South Florida spots like Bread + Butter, Little Bread Cuban Sandwich Co., and The Local Craft Food + Drink—has composed a menu of large-format meats, rice, vegetables, and seafood that ranges from Cuban classics such as vaca frita, ham croquetas, Cuban sandwiches, and a tabletop Caja China to more modern plates like charcoal roasted black grouper with piperade, English pea puree and roasted lemon, and salt cured short rib with aporiado sauce. The bar program offers an extensive to-go and dine-in cocktail menu featuring a rum-based Old Fashioned, a passionfruit mojito, and large-format cocktails sized for 6–8 guests. Inspired by Cuban cities like Camagüey and Pinar del Rio, the space centers on a Havana-inspired bar and mixes rustic elements with bright, colorful accents plus an outdoor pergola reminiscent of “el campo.” It opens next Monday, June 29, will operate daily (11:30 a.m.–10 p.m. Sunday–Thursday; 11:30 a.m.–11 p.m. Friday–Saturday), has bar happy hour Monday–Thursday from 5–7 p.m., and offers takeout menus." - Olee Fowler
