"Beginning as a hallway pop-up in the former La Perlita cafe, Clandestino became Romero’s dedicated space to explore food that was entirely his own: during the early days of the COVID-19 pandemic he served carnitas tortas and guisado-filled pastes, later moving into the Lil’ Dame space where he and other República alumni served salsas with house-made tortilla tostadas and grilled whole fish over flames; Romero eventually handed off day-to-day operations as he refocused on other projects." - Brooke Jackson-Glidden
