"Tucked inside the Ritz-Carlton Laguna Niguel in Dana Point, I experienced a new omakase pop-up from New York–based chef Kei Yoshino in partnership with restaurateur Ryan Chadwick that runs July 15 through November 5; the 16-course meal is priced at a fairly modest $175 per person and can be paired with beverages for an additional $95. Highlights of the lineup include A5 wagyu, zuke toro nigiri, Hokkaido uni, hay-smoked Spanish mackerel, and toro tartare with osetra caviar, with much of the seafood sourced from Japan; seatings are at 5:30 p.m. and 8 p.m. Wednesday through Sunday and reservations are available on Tock." - Matthew Kang
