"Opening this June in Carlsbad, I learned that Casero Taqueria, a new concept from co-founders Clayton Wheeler and Craig Applegate (who also own several local Board & Brew franchise locations), will occupy 5,059 square feet and seat 155, featuring an indoor/outdoor bar serving spirits, wine, and beer and a fast-casual menu developed by veteran local chef Alex Carballo. Tacos will be based on hand-pressed tortillas and filled with citrus-marinated carne asada, chicken, and local line-caught fish cooked over a wood-fired grill; the menu will also include tortas, shareable seafood-based seafood starters, slow-cooked carnitas and birria, and classic Mexican desserts.
