"Since 1964 Vitello’s has been serving martinis and whiskey sours alongside plates of spaghetti and eggplant Parmesan, and in 2016 it added the Rendition Room speakeasy hidden behind a door disguised as a bookshelf. The restaurant’s team researched top speakeasies and visited several along the West Coast with the goal of building a 1930s-style bar, and they sought out Scott Warren — a bartender with a decades-long career and international experience — to shape the bar’s menu and atmosphere.
