Developed with Chef Josh Green and created by Downtown Hospitality Group, the menu features 13 varieties of bacon — including lemon pepper, tajin, black truffle, chocolate, black pepper, jalapeno, barbecue, honey sriracha and everything-bagel — and culminates in a reverse BLT held together with two woven sheets of bacon that act as the bread, enclosing lettuce, tomato and toast. Over-the-top items include French toast boxes served like Japanese honey toast and stuffed with choices such as bacon, peanut butter and banana, marshmallow fluff with fruity cereal, or sausage-bacon-egg-and-cheese; a Three Little Pigs flight of three signature bacon flavors; bacon-wrapped pickle spears; maple bacon cheesecake; and an Elvis milkshake topped with a peanut butter-and-bacon sandwich.
