"Washoku Renaissance, led by award-winning chef Youji Iwakura, is currently open for pre-reserved dinners in Foundation Kitchen (a shared culinary workspace and food hall) as a pop-up featuring an 8-seat sushi kaiseki counter. The experience is intended to evoke that of an old-downtown Tokyo-style sushi supper club, blended with the feel of omakase. The set menu includes 16 courses, including soup, kaiseki appetizer(s), and nigiri sushi. Iwakura was formerly behind the downtown Japanese restaurant Kamakura, before closing and operating Washoku Renaissance as a ghost kitchen during the COVID-19 pandemic.
