"Opening October 3 at 704 North 34th Street in Fremont, I see Kayava as Plenus’s bid to launch an “artisanal ramen” concept in the U.S.; the press release defines artisanal ramen as soup, noodles, chashu pork, and bamboo shoots all meticulously prepared by hand. Plenus—best known in Japan for Hotto Motto and Yayoiken—has brought on culinary consultant Masuo Onishi (who owns two ramen spots in Japan and the Tsurumen in Boston) to lend credibility, and Kayava lists paitan as its flagship ramen while also offering pork shoyu, truffle shantan, and other flavors. The owners say they hope Kayava will start a new wave of ramen culture and expand to additional locations, and the Fremont shop will be open Wednesday–Sunday, 11:30 a.m.–3 p.m. and 5 p.m.–9 p.m.; it will not take reservations and will post updates on Instagram." - Harry Cheadle
