"A sweet, modern café launched by three friends who moved from Japan two years ago, it aims to bring Tokyo’s European-inflected bakery culture to Denver. Co-owners and bakers Manri Nakayama, Hiro Arima, and Satoru Matsumura—college teammates with more than 15 years of combined baking experience—offer a mix of traditional Japanese and inventive pastries: matcha-dusted doughnut twists, custard-filled cornets, a spicy cod roe baguette, pillowy shokupan milk bread by the loaf, melonpan, and curry-filled karepan. Brioche are filled with matcha and other creams, and savory options include bacon or sausage wrapped around pain d’épi or tucked into soft buns. Beverage choices include matcha and green tea lattes, a turmeric-and-ginger chai, and a full espresso bar.
