"I joined a two-hour walking tour run by Unexpected Atlanta, led by founder and culinary historian Akila McConnell, that delves into the history and lore behind Southern biscuits—tracing their roots back to Sumerian flatbreads and the breads of ancient Africa and the Roman Empire—and pairs that history lesson with a Southern food tasting and a biscuit baking class at the Municipal Market. McConnell, who wrote A Culinary History of Atlanta, frames the buttermilk biscuit as an integral part of Atlanta’s cuisine whose history is largely overlooked; the tour includes tastings from market vendors (11 tastings total) and ends with hands-on baking in the market’s events kitchen.
