"Opened in March at 360 Nueces Street, Suite 20 in Austin, this fast-casual sandwich spot centers on a porchetta sandwich — a boneless pork roast stuffed with a spice rub, salsa verde, and herbs, served with cracklings and salsa verde — and also offers sandwiches such as meatball, Buffalo chicken, peppercorn beef, and grilled cheeses. The menu includes a range of dips (from truffle‑parmesan to habanero‑cilantro cream), a daily soup (for example, tomato), salads like a kale Caesar and a broccoli‑farro with optional protein add‑ons, plus beer, wine, and other beverages. The Austin location is run by licensees Ernie and Lindsay Jordan Villarreal, who hold the master franchise rights for the area after Ernie pursued a porchetta-focused concept; the original concept was launched in Vancouver in 2010 and later expanded to Calgary (with a former Seattle presence).
