It focuses on biodynamic and natural wines—reds and skin-contact selections available by the glass from small producers in France, Italy, and Switzerland—and aims to help guests connect the bottles on the brief menu to the land and stewards who made them. A compact cocktail list includes classics with twists (notably a banana daiquiri called Fool’s Gold made with Oaxacan rum and smoked banana cordial), while light snacks range from anchovies and olives to a mortadella plate or a mortadella sandwich with pistachio pesto.
