Sichuan Hot Pot Chain Shoo Loong Kan Is Landing in Bellevue | Eater Seattle

"A Sichuan-origin hot pot chain, Shoo Loong Kan (known as Xiaolongkan outside the U.S.) is coming to West Main in downtown Bellevue. It opened its first U.S. location in Los Angeles in 2019 and now has branches in Chicago and New York, with future locations planned in New Jersey, Dallas, Houston, and Las Vegas. The Bellevue outpost will occupy about 5,000 square feet and feature a huge 3-D mural of a dragon; a Vulcan press release says Shoo Loong Kan plans to open later this year." - Harry Cheadle
