"Tucked away in the underground International Food Court at 380 Bush Street, I can watch Pushkin's handmade pelmeni being rolled by hand and boiled in large pots of chicken broth for the downtown lunch crowd. Besides the traditional beef pelmeni, they offer playful twists — lamb with hints of ginger and mint, chicken with basil and parmesan, and beef with smoked gouda — and all of Pushkin’s dumplings are served in broth and color-coded, which makes a mixed order feel festive. Open since 2017 and founded by Sergey Shukailo (who comes from Ukraine and also serves vareniki), Pushkin’s vareniki are stuffed with mashed potato and mushrooms, boiled, then pan-fried and topped with fried onions." - Sasha Vasilyuk
