Venison lal maas pays homage to the vibrant flavors of Rajasthan, simmered in rich gravy with fiery Mathania chiles and served with caraway potato mash. Gucchi chicken, surrounded in morel mushrooms and pine nuts, is another gorgeously plated dish.
