"A fair question to ask is, “Does Chef Oscar Diaz sleep?” Fresh off the heels of opening Aaktun in Durham (an opening pretty much concurrently with a Cary Aaktun outpost), TaTaco puts Diaz’s twist on a classic Mexico City taqueria. Diners are greeted with chips and bean dip (common in CDMX, less so in the U.S.), the enchiladas enmoladas come short-stack style instead of rolled, and TaTaco might just be one of the only places in North Carolina offering zarandeado-style whole fish.
