"Planned as a Saint-Denis Street incubator opening in early 2022, Jus is conceived as a hybrid space where I would test pop-up restaurant concepts for six months while providing mentorship on payroll, staffing, pricing and operations, and possibly invest successful projects through a new hospitality group; the space will also host a wine and sake studio run by Asma Ben Tanfous of online shop Déserteur for tastings, sake workshops and mixed-case pick-ups, though Ben Tanfous’s plans remain tentative. I’m already lining up participants — including Marc Swiednicki, Jongwook Lee and the team behind Pasthyme — so chefs can trial ideas with less pressure and learn the ins and outs of running a restaurant." - Valerie Silva
