"I've watched the Bay Area–based Detroit-style pizzeria Square Pie Guys build a reputation for limited-run collaborations (past partners include Jeremy Lin, Melissa King, and Samin Nosrath) and now debut a new Indian-inspired collaboration developed with cookbook author Hetal Vasavada and the restaurant's director of marketing and innovation, Priya Kane. Working with Square Pie Guys's thick Detroit-style crust rather than a thin slice, they created two “tikka-ish” pies — Paneer Tikka-ish (tandoor-marinated paneer) and Chicken Tikka-ish (tandoori chicken) — that start with a tikka-style sauce and are finished with masala pickled onions, a cilantro-mint chutney–like drizzle made from Kane’s mother’s recipe thinned with yogurt, and green onions. The pies intentionally blend family recipes and Indian American identity while questioning ideas of authenticity, and they’ll be available at the Oakland and San Francisco locations from April 25 through the end of July, with 3% of sales benefiting the nonprofit Food Wise." - Dianne de Guzman
