"Flake Bakery, run by baker Cristina Quintino and her husband Stephen Chen, sells one thing and one thing only: the traditional Portuguese pastel de nata, or egg custard tart. Quintino is so confident in her product that she doesn’t stock any other pastries in the shop — and she sold out so fast in the bakery’s opening months that she had to institute order limits on the weekends.
