"We make transparency part of the service: because people's real wait clock starts when they order, I keep tight inventory (down to the last tortilla ball) and proactively go into the line to ask how many tacos each person wants; once we're about 70 percent through I announce the end of the line so customers don't wait to the front only to find out we're sold out, and they tend to be grateful for that honesty. We're also expanding — a flagship brick-and-mortar will open in Greenpoint this fall." - Eater Staff
