"We make transparency part of the service: because people's real wait clock starts when they order, I keep tight inventory (down to the last tortilla ball) and proactively go into the line to ask how many tacos each person wants; once we're about 70 percent through I announce the end of the line so customers don't wait to the front only to find out we're sold out, and they tend to be grateful for that honesty.
