"La Cosecha’s Latin-American chefs Miguel Guerra and Tatiana Mora whip up a veggie-forward takeout menu for the holidays. The star of the show is a pot pie comprised of celery root, maitake mushrooms, green peas, and carrots with a roasted vegetable gravy. Supporting elements include mashed potato gratin with crispy sunchokes; a Brussel sprouts casserole made with kabocha squash and figs; and homemade Brioche featuring cranberry and pearl onions, plus a pumpkin cheesecake dressed with candied pecans and maple Chantilly for dessert.
