Water Grill hiring ahead of Forum Shops debut - Eater Vegas
"Southern California’s Water Grill had hoped to debut at the Forum Shops at Caesars last month, but signs now point to a “grand opening” within a few weeks, taking over the former Spago restaurant space vacant since January 2018. Beginning the hiring process soon, early paperwork filed by Water Grill in December estimated a construction budget of $3 million to overhaul the spacious 16,087-square-foot project. Still planning to use Spago’s very popular mall-facing patio, the interior by Hatch Design Group will add a “signature copper-top bar, reclaimed wood flooring” and an exhibition kitchen. A private dining area will be large enough for 80 diners. Still keeping the overhaul under wraps, Water Grill has shared that hundreds of empty oyster shells have be made into a chandelier, now ready to hang over the raw bar. Dinner menus at its downtown Los Angeles location have included iced shellfish platters, clams, scallops, Dungeness crab, charcoal grilled fish and steaks, New England lobster rolls, and entrees of “Wild Maldives Bigeye Tuna” and “Farmed Ecuadorian Shrimp and Grits.”" - Bradley Martin
