"I’m excited that a Japanese-style soft serve shop is opening its first location outside Washington State this July in Echo Park at 1710 West Sunset Boulevard next door to Izakaya Dongame. Indigo Cow, founded by Hokkaido native Keisuke “Kay” Kobayashi inside his Seattle restaurant Yoroshiku in 2021 and expanded to Bellevue in 2023, is best known for importing its milk, cream, and condensed milk from grass-fed cows at Iwase Farms in Sunagawa, Hokkaido to make a thick, creamy soft serve. Flavors like Hokkaido Milk — their most famous and best-selling flavor — and hojicha are served in cups or cones with toppings including housemade seasonal fruit sauces, Theo chocolate, shiratama dango (mochi balls), kinako (toasted soybean powder), and the most popular topping M.B.R. (mochi, brown sugar syrup, roasted soybean powder). Overseen locally by operations manager Yushi Osawa, the Echo Park shop is the start of planned expansion across Los Angeles, Orange County, and San Diego, and will be open daily from noon to 10:30 p.m." - Cathy Chaplin
