"At Woomiok, the “emperor soup,” seolleongtang, takes almost 24 hours to prepare: beef bones and oxtails are simmered for hours until a rich, creamy white bone broth is made. A visit to Woomiok on a Sunday might just be the cure for a long weekend, as the nutrient-dense bone broth has health properties (collagen, calcium, and other minerals) that make a good hangover remedy. Experiment with add-ons to customize the broth — try brisket or short ribs for extra protein or a side of vermicelli noodles.
