"Ever since it opened in Japantown in San Francisco in 2019, I've seen it consistently attract hours-long waits for its namesake kalbijjim — a huge, shareable bowl of spicy-sweet short rib stew covered in melting cheese and flambéed tableside. With four Bay Area locations, the Korean restaurant is opening a Las Vegas outpost; signs are already up at 2580 South Decatur Boulevard (the 2,789-square-foot corner space at Decatur Boulevard and Sahara Avenue), large images of its soups, stews, and comfort dishes are displayed, a permit was issued in December of last year, and an Instagram post confirms the upcoming opening that was expected to open in 2023. The tight, mostly beef-focused menu also features hot stone bibimbap bowls that sizzle when brought to the table with layers of rice and vegetables and generous banchan on the side, kalbi tang soups that marry a savory broth with tender meat and satisfyingly chewy glass noodles, and a sign indicates it will serve the cold naengmyeon that’s only available at the San Mateo location — a refreshing alternative for hot Vegas days.
