"I visited Rosslyn’s chill, new Inca Social, which opened in December and centers on a sushi and ceviche bar; it debuts a new menu on Monday, January 17 that leans into Japanese-Peruvian Nikkei dishes like ceviche, tiradito, sushi, and causa. It’s rare to find Peruvian-style sushi in D.C., but co-owner Fito Garcia says the Peruvian-Japanese dishes are now the hallmark of modern Peruvian restaurants, and because this Rosslyn location is bigger they wanted to distinguish it with fusion. I appreciated Eater’s Monica Burton’s framing that Nikkei isn’t the dilettantish mid-’00s “fusion” so much as a distinct cultural cuisine developed over generations. Although the Rosslyn spot threw open its doors on December 21, the kitchen has been focused on perfecting the traditional Peruvian staples it serves at the original Inca in Vienna, while making the ceviche-and-sushi bar the focal point here. Of the new items, Garcia expects a tropical ceviche with mango, pineapple, passionfruit, and shrimp to be perfect on the patio in summer, and he raves that the jalapeño-rich green sauce on the chicken wings would taste amazing on anything — he says he wants to eat it every day." - Stephanie Carter
