The 16th Street Mall’s Newest Restaurant Gives the Old West Saloon a Modern Update | Eater Denver

"Occupying a portion of the 128-year-old Kittredge Building at 501 16th Street on the 16th Street Mall, this new saloon-style restaurant purposely chose an unusual name to provoke curiosity and to celebrate Old West values of freedom and escape, positioning itself as a comfortable, temporary respite from daily life. The space preserves the historic bar, columns and woodwork from the previous tenant while adding modern touches such as new chandeliers, an updated tap system, big-screen TVs and an improved sound system aimed at game-day crowds. The former mezzanine has been renovated into a lounge called 1891 (a nod to the building’s construction year) that offers panoramic views of the dining room and the mall through large windows. The menu is roughly 80% well-executed, approachable saloon favorites—early popular items include a fried chicken sandwich and a pot pie—and 20% more adventurous dishes like elk meatballs, lamb sliders with caramelized onions, and mango tamales topped with mole sauce.
