The aguachiles — fiery baths of shrimp, fish, and octopus — are unrivaled. They come served in a molcajete, the volcano-stone vessels traditionally used to grind spices and make guacamole, with enough seafood to share. Try the aguachile negro, which is spicy as hell and seasoned with Maggi.
