"A tiny corner bodega that shapes the author’s daily diet, stocking produce like trusty broccoli, a plastic tray of grapes and the occasional pre-sliced mango alongside basic breakfast essentials. It’s halal-compliant, so the deli shelves carry only turkey bacon rather than pork; the turkey bacon looks the color of deli ham and is bacon-shaped but shows no fat or marbling. Pan-cooked it initially steamed and released a lot of water, but with a generous glug of olive oil the edges crisp and the pink strips turn a pleasing bacon-like brown without coating the kitchen in grease or lingering bacon smell. The result is surprisingly delicious — used in sandwiches or served with eggs, pancakes or waffles — offering a less rich, more approachable alternative to pork bacon that the author now prefers for everyday breakfasts." - Elazar Sontag
