"On a blustery Sunday evening in March, a throng of Prague cocktail devotees stood outside, the jam-packed dining room buzzing while the prominent metal bar hosted Alex Kratena of Tayēr + Elementary and Simone Caporale of Barcelona’s Sips, who were showcasing their Muyu Liqueurs in enticing tipples tasting of jasmine, vetiver, and chinotto. Part of the KRO hospitality group and rooted in the city’s New Town, it’s an all-day affair: mornings hum as a sunny café serving plump doughnuts; by afternoon, a lush-meets-industrial back dining room teems with guests; and into the night, dishes like beef tartare strewn with Gran Moravia cheese and pickled mushrooms meet complementary libations. Beverage lead Pavel Sochor channels experience from London and Edinburgh into an on-site lab for sustainably minded drinks that explore unconventional ingredients—an Air Mail riff embracing Jerusalem artichoke cream, a frozen vodka Martini that incorporates black garlic and peppermint, and a No Espresso Martini enriched with ghee. Devoid of formality and intentionally edgy, it invites a cocktail at any time of day—“it doesn’t need to be something purple and drunk after Midnight”—and since debuting in 2023 its game-changing attention has helped shine a light on like-minded Prague bars keen to amplify quality and creativity." - Alia Akkam
