"At Kitamuro Hakusen I met a mother-daughter somen-making team who've been making the very thin white wheat noodle for almost 40 years, working 14-hour days, six days a week; the mother persuaded her husband to keep the family factory going and now serves as president running day-to-day operations. They generously gifted me a case of a spaghetti somen prototype they'd been working on and a case of tea, which friends at the indigo dye company Buaisou offered to ship home." - Elyse Inamine
