Saint Urban's menu changes monthly—and stellar wines lead the way - Review - New York - The Infatuation

"At most restaurants where the thickness of the plush white tablecloths can be measured in centimeters, and the staff wear full suits and ties, the (probably excellent and definitely expensive) wine is a complement to each composed course. Saint Urban—a restaurant that recently arrived in the Flatiron from Syracuse—cleverly flips the script. Here, the tasting and prix-fixe menus ($188 and $148 respectively) change each month to highlight a different wine region, like Tuscany or Southern France. The wine pairings range from $90-$410 (we suggest the $175 Reserva pairing), but whichever you choose, expect stellar wines at good value, poured before each dish arrives. The experience is like a mini tour—of Spain’s wine-growing regions, for example, with dishes that might include milk-fed pig with sherry-pickled peach, turbot with arroz negro, and a crusty rye sourdough. Now a beige room with loungy music, the environment might seem uninspiring at first.
