Join in—that wait’s only about 20 minutes on a busy night—then head up to a dark, shotgun-style bar with a heavy wood bar top, like you just wandered into a second-floor saloon that inexplicably plays loud, obscure indie music. The cocktail menu here updates seasonally, but there is also a long list of mezcals, amaros, and absinthes, which the bartenders seem to combine every single one into inventive drinks that get made in record time.
