"Notiê has emerged as one of São Paulo’s most interesting restaurants. It’s set in a grand old building overlooking the Theatro Municipal, and its chef, Onildo Rocha, focuses each menu on a specific Brazilian biome, using ingredients and techniques from that region, based on extensive on-the-ground research. Focusing on the likes of the Amazon or Cerrado, each menu lasts six to nine months. Highlights from the most recent, Chapada Diamantina, a high-altitude canyon-laden area in the northeastern state of Bahia, included a cashew and black tucupi custard with fish eggs and grated cashew, and coffee-crusted lamb.
