"Tucked away in an unassuming alley on East 5th Street, Mercado Sin Nombre feels like stumbling across a secret window that dispenses corn-based treasures. It’s a roaster, tortilleria, and bakery—and somehow it excels at all three. Maize is the centerpiece here, and you’ll find it in everything from the s’mores masa Twinkie—topped with toasted marshmallow and filled with fermented chile ganache—to the atole cortado, lightly sweetened with piloncillo and made rich with nixtamalized yellow corn. photo credit: Nicolai McCrary There’s usually some kind of market on the weekends—as a result, things can get kind of busy–but show up during the week and it shouldn’t be hard to find a stool at one of the small tables fashioned from small stacks of milk crates and plywood. Grab a cortado or a corn soda, stock up on whatever pastries are available, and get as comfy as you can on a backless stool.
