Once you get through the random doorway at Chophouse Row on Capitol Hill and into the lobby, you’ll find a little seven-seat counter. Behind it, there’s miso soup boiling on a hot plate and a man who tends to it. You’ll find only one thing on the menu, and it’s a handroll tasting that involves three handrolls for $25.
